A Healthy Snack-Pop Corn !

 A Quick, Easy, Healthy, Tasty Snack !
Want to make something tasty to snack on while watching a good movie or any time really ..
I made a few big bowls of pop corn today and it went down a treat with every one..
I popped my corn in a pop corn maker but of course if you don't have one you can use a pot on the stove top..Then I added a good grinding of Hymalayan pink salt, which is full of minerals and tastes great on just about everything..and about a tablespoon or two of extra virgin coconut oil. This weather you may need to pop your coconut oil into some warm water so it can be poured over your popped corn, give it a good toss and eat& enjoy...Extra virgin coconut oil is fabulous for a good healthy brain ...Among so many other things..just google how good coconut oil is for you and you'll be totally amazed..that's why I always make sure our pantry is well stocked with a few jars at all times...

Sardine Canapes (Paleo recipe)

Sardine Canapes !
I've been eating the paleo diet for 3 weeks now ..The cave man diet..the food that our ancestors would have eaten...well as close to that as possible ...meat, fish,eggs,fruit, vegetables,nut and seeds...water...Any way I'll talk more about it when I have time and the energy ..This is one of my paleo recipes I created...it's quick,easy and rather tasty...Great to serve family and friends over the summer season or just great for a quick snack or lunch...One tin of sardines, finely diced onion and a good squeeze of lemon juice mash well together in a bowl and put onto slices of cucumber ..Also great for any one following a low carb diet too. This could also be good if you need to take a plate to a function over the summer ...Sorry the photo is a little blurry ..camera has been playing up ...maybe time for a new one...things don't last long these days do they....

My Yummy Potato Salad Recipe !

                     This is my yummy potato salad recipe !

I love potato salad, I make it quite regularly during the warmer spring, summer season.
Here is my recipe I don't like ones with mayonnaise...I use fresh lemon juice, extra virgin olive oil and little honey and some celtic salt...I steam the cut up potatoes, I usually make a big batch to last a couple of days makes a quick easy lunch ...So while potatoes are steaming away, I cut up an onion any type red spanish can add a lovely colour but this time I just used a brown onion finely diced . I put the dressing that I make as described above in the salad bowl. Then I add the onions then add the cooked potatoes toss really well so all the dressing gets absorbed into the hot potatoes..I also add a sprinkling of dried mint for extra flavour  and some fresh mint from my garden adds extra colour and flavour and serve ..its so delicious ...Hope you give it a try ..if so let me know how yummy it was...
NOTE: You can also add apple cider vinegar in place of lemon juice..I always try to have lemon juice available ..when lemons are in season I will juice them and freeze them in ice cube trays then pop them into a zip lock bag in the freezer...note to myself I have a big basket full of lemons that I need to juice..to make some more lemon juice ice cubes, they are so handy ...for making salad dressings or popping into a glass of water on a hot summers day..very refreshing ..to make cheese cakes, anything that requires lemon juice...

Yoghurt,Apple & Crumble Mixture Makes A Delicious Breakfast !

This is such a delicious,healthy breakfast !
I have been regularly eating this combo for breakfast its so yummy, I thought is was worth sharing with you all, its always nice to see what other people are eating, can give us some great ideas. I hope you try it, its just wonderful. I make my own yoghurt its a product called progurt, its very expensive well I think so, at $20 a litre, but its a strong pro biotic to help rebuild my gut flora. But you could use any yoghurt of choice, I peel and finely grate a green apple, which goes like an apple sauce, then I add my crumble mixture, then I layer it in my glass jar, this is great to have for morning tea or late breakfast at work, I love using glass jars for storing food in, they travel so well also. Now for the crumble mixture, this recipe came from a miss hap I guess you could say. I was trying to create a power ball recipe, I could of added more dates to the mixture, but I chose not too. The ingredients are 1/2 cup of all of these, chia seeds,sesame seeds, almonds,linseeds, sunflower seeds, organic coconut butter & dates, now throw every thing into the food processor until it resembles a crumbly mixture store in a sealed glass jar in the fridge.In a glass jar I layer yoghurt, apple sauce and crumble mixture.I Like eating it this way because some times you get apple and yoghurt, other times you get yoghurt and crumble its a nice taste sensation. Feta Spinach & Zucchini Slice !

Feta, Spinach & Zucchini Slice !
I love feta & spinach slice made with filo pastry, So I have made another version with out the filo pastry.
Here is my recipe.
1 large finely chopped onion.
2 bunches of English spinach roughly chopped.
1 large zucchini grated.
450 grams feta cheese chopped up small.
12 free range eggs.
1/2 a fresh grated nutmeg.
1 cup of buckwheat flour.
note: Its optional to use the flour it made the slice firmer, without the flour there was a little liquid in the dish after cooking. Add all ingredients pour into oven proof dish, cook for about 50 minutes or until golden brown and firm to touch.I cook it at 160 degrees in a fan forced oven. I have also made it frying the onion first and wilting the spinach and removing excess liquid, both versions tasted about the same. So I will not be bothering to fry the onion first as its takes longer and makes more washing up. Serve with a nice salad or steam vegetables....

Potato & Corn Soup !

Potato & Corn Soup !
This is a really hearty,easy,delicious soup.Its also very economical,its one of Kev's favourite soups.
Ingredients.
3 large brown onions.(chunky diced)
2 kilo potatoes.(chunky diced)
2 cobs of fresh Corn.(can use tin creamed corn)
1-2 Zucchini.(chunky diced)
Salt & pepper to taste.
1 cup red lentils.
water or stock.
Its quite a chunky soup but that's optional you can make it however you like , I fry diced onions in a little olive oil, then I fry the potatoes and zucchini,
then I chop all the kernels from 2 cobs of fresh corn and puree in a blender with water then add to other ingredients in the pot , then you top up with either water or stock, I use water because I use celtic salt for flavouring. Then I add red lentils, mix well then bring to a boil then simmer until cooked. Serve with fresh cracked pepper and salt, it's delicious. Some times I finely cut some red capsicum and green spring onions and stir through or some finely chopped fresh parsley. Makes 6 litres!

Making Your Own Yoghurt !
Been making my own yoghurt the last few days.
delicious ! I purchased yoghurt they had on special 2 x 1kilo tubs of Margaret River natural Greek yoghurt for $5.In my cupboard I found an old mayonnaise jar that holds 1 litre . (the easiyo yoghurt maker has a plastic container but I prefer glass as it sits in boiling water )I put 1/2 cup of commercial yoghurt in jar added a litre of room temperature long life milk that was 89c stirred well put lid on and put in my easiyo yoghurt maker and left for about 12 hours. So for just over a $1 I made a litre of yoghurt. This morning for breakfast I made a banana smoothie, with yoghurt, 2 bananas, little water,maca powder ,rose hip granules and klenz a fibre powder, it was delicious. If you don't have a yoghurt maker you could wrap it up and put somewhere warm .I have also made it in my wide mouth stainless steal thermos, but you need  to warm the milk up first, about body temperature . I think it's worth giving a try !
