Do you love sushi but feel it's so high in carbs, well here is a fabulous recipe I created quite a few years ago when I used to eat raw foods only. It's so delicious, I really hope you give it a try. When I served this to my teenage boys they thought it was rice, how amazing is that. In place of rice you use cauliflower. just wash and roughly chop and throw into food processor and finely grind it up until you can feel a little moisture, this is really necessary, because if it's to dry it will just fall out. Then you just
make up like you would normally make sushi. But for any one who hasn't made it before,I will go
through the steps with you.
grind up cauliflower in food processor , should look like photo. make sure it's quite moist.
Lay out your seaweed sheet on a flat surface, shiny side down, then spread with about 3/4 cup of cauliflower mixture.
My favourite filling is avocado, cucumber &carrot.
layer them like in photo and roll up, you may need a little water along the edge of seaweed to help it stick. Then using a very sharpe knife and cut into pieces like in first photo. To make is easier wet knife each time gives a clean cut.
serve with some tamari or soy sauce.
