Chocolate Cakes !
This was an old recipe my mum had given to her from a friend when I was about 10 years old.
It was a Simplicity chocolate cake recipe, I have made a few changes over the years, the top has a nice biscuit crunchiness and underneath; light and fluffy. You can either make muffins or a cake,I always prefer to make them in muffin trays so much easier to serve, no cutting and crumbs, saves lots of mess and they cook quicker. I usually double the mixture to make 24 at a time because they freeze well, if doing so just use 3 eggs. Here is my version.
2 cups whole meal S.R flour.
1 cup sugar.
1 cup milk.
½ cup cocoa powder.
¼ cup olive oil.
2 eggs.
Method: Mix all ingredients well together, and cook in a preheated oven 160 degrees in my fan forced oven for 20-25 minutes( 190 degrees if not a fan forced oven), makes 12 large muffins.If making a big cake cook for 1 hour.
Serving suggestions, you can ice them with chocolate icing or serve them with a dollop of fresh cream & dust with icing sugar. To make icing just add some cocoa powder & icing sugar add some water to make a spreadable consistency, ice when they are cool. Note: They also freeze well, I freeze them in either a plastic bag or ice cream container and give them to Jack for his recess snack at school & Kevan for his morning tea.
Note:To make failsafe recipe, use another suitable oil, eg rice bran oil, butter or suitable margarine. If amines are a problem then replace cocoa powder with carob powder. If you have a problem with gluten & dairy, then use alternatives.
