Boston Bun !

Boston Bun !
What a great way to use up any left over mashed potato !
Ingredients
1 cup of mashed potato
1 cup mixed fruit or sultanas
1/2 cup of sugar
2 cups S.R. flour ( I used wholemeal)
1 cup milk
1teaspoon. Mixed spice
You can ice it, add a little bit of vanilla to the icing and sprinkle over with coconut .
Pre heat oven to 190C. I lined a 20 cm cake tin with glad bake . Mix the potato and sugar together first then add all remaining ingredients and mix well. Cook for approx 35-40 minutes until firm to the touch in the centre and beginning to leave the sides of the cake tin. Remove from tin and cool. Top with the prepared vanilla and coconut icing if you like,I didn't want extra sugar so I didn't ice it .It's a great way to use up any left over mashed potato, or if you plan to make it make extra mashed potato a head of time. In the recipe it said 3/4 cup of sugar I felt it was too sweet so I changed it to 1/2 cup the next time I made it ,and it said warm mashed potato I used potato from the fridge and it tuned out great . Sliced and toasted with some butter it was absolutely delicious !

  2. Sounds great Sherrie! Love how your cooking uses wholemeal flour and not a lot of sugar - just what I need at the moment as we are trying to eat healthier :) Keep them coming LOL!
