Gluten Free Salmon Patties

I made Salmon patties last night for dinner!
These are so simple and inexpensive to make and taste great hot or cold.
1 tin of Salmon 425 grams.
1 kilo of cooked mashed potatoes.
1 medium brown onion finely diced.
parsley finely chopped.
1 beaten egg mixed with a little water.
Polenta (corn meal)
Mix all ingredients well together then form into patties then roll into egg mixture then coat in polenta meal , then fry in a pan with a little oil, I use extra virgin olive oil. I use polenta because it's gluten free, but you can use bread crumbs or rice crumbs or corn flake crumbs. These are delicious served hot or cold , they make great sandwiches mashed onto bread add some chili sauce or mayo then add some finely shredded lettuce. You can also make them go further by adding more mashed potato. These are great for taking to a party or gathering serve them on a platter of dark lettuce leaves with some dipping sauce ..You can also substitute a tin of tuna if you prefer or if that's what's available in your pantry or cupboard.

    I made these ages ago (or at least my variation of them for my kids. The one who hates fish wolfed them down and I could have made twice as many. Thanks for the reminder about them and its good to be back onto your blog again ...
