What to do with them all !
We have been given lots of lemons, but what to do with them all. We are going to squeeze a lot of them into 1 cup measurements and freeze, that will be great for making our home made ginger beer. I will also make lots of ice cubes, they are always great for making salad dressings, hot lemon drinks in the cold weather or lemonade in the summer. I usually make lemon cordial, perhaps I will make a batch or two. I will also zest some its great to put into recipes I made my apple cakes the other day and put the juice of a lemon and the zest of two lemons it added a really nice tang. I can also make my lemon bath salts which also uses the zest of the lemons. Last year I made a big batch of lemon peel chutney , I got all excited because I had juiced a heap and had the skins and thought what can I use them all for. I was really disappointed, I hated it , Kev said it was ok .Suffice to say I won't be making that again, you live and learn. I do have a recipe for lemon and poppy seed muffins, perhaps a batch of them. I'm not really into lemon butter. Any other ideas will be really appreciated, I would hate to see them go to waste.

  1. Preserved Lemons. Once you get a taste for them, they're a pantry staple. So easy, great for gifts, make an ordinary something into gourmet. A little finely chopped preserved lemon in couscous, before you pour over the boiling water, and it's the best side dish. Add to fish or chicken stews, salad dressings, marinades....

    (And, when you run out of eating recipes, lemons are great for cleaning. Lemon season is often an incentive for me to do my once-annual oven cleaning etc).

  2. We have the same trouble. Ours are nearly ready to pick and I still have 6litres of juice from last year in the freezer..

    Cordial and lemon spread are my favorites. One DD make a yummy lemon cake but there's onlt so muchcake we should eat.

    You can freeze them whole if you don't get around to using them. Give some away...

  4. I was given a tonne of lemons too so I made some cordial (going to try orange next too) and some lemon curd.
    I also made some lemon vinegar to use in replace (50/50 with water) Spray n wipe.
    It's easy to do, I also have a couple of orange/mandarin ones on the go too.

  5. I once tasted lemon jam. And I loved it! Lemon jam is a specialty of Sardinia (Italian region) and my mother in law gave it to me when she returned from vacation there.

    Seriously, there are a lot of really good lemon recipes and it is hard for us in the citrus-free part of the world to imagine getting tired of them. Have you tried www.allrecipes.com ? Do an ingredient search and you will have all the ideas you can handle.

Thanks ladies for all your great ideas...Lemon jam sounds interesting ...I'll need to do a search for a recipe for that one...I've also thought about doing the lemon vinegar cleaner, so easy thankyou...I've thought about doing the preserved lemons...I have a recipe, so thanks for the reminder. candied lemon peel, how much suar do you use for that barb ? when I cook my quinoa salad I often grate lemon zest into it ,tastes devine...so many great ideas...please keep them coming I really appreciate all of them.
