Last night we had hedgehogs cooked in our thermal cooker as the power was out all day here as they were replacing 3 poles in our area. I love our thermal cooker it is fantastic. So yesterday morning I got it all ready and dinner was ready last night I served them with mashed sweet potato and steamed broccoli they were so delicious here is my recipe.
750 grams mince I used lamb & beef.
1 kilo of fresh tomatoes pureed.
1 medium brown onion finely chopped.
1 large zucchini grated.
1/2 cup Parmesan cheese.
2 tablespoons uncooked rice.
A few garlic cloves finely chopped.
1 teaspoon dried basil.
1 teaspoon dried oregano.
1 desert spoon Celtic salt.
2 tablespoons of flour I used buckwheat flour.
First I pureed the tomatoes in my blender then added the liquid to my thermal cooker and put it on high to heat up. (you can use bought pasta sauce if you like)
Then I mixed all the other ingredients together in a large mixing bowl then rolled into balls about the size of golf balls then rolled them in the flour so they were well coated. then put the balls into the tomato puree brought them to a boil for about 10 minutes then turned them down slightly just so they weren't boiling for 20 minutes then into my thermal cooker. that was at 9am and we had dinner about 6pm....I've also made this recipe many times in my crock pot or slow cooker....
My MIL used to make something similar to this; it was called 'Porcupines'. Your version is heaps healthier...her's used tinned tomato soup.
